2. Sodium gluconate is a new functional flavoring agent in the food industry. It can give food a sour taste, act as a stabilizer for adjusting food pH, improve food taste, prevent protein denaturation, mask unpleasant bitterness and astringency, and can replace salt to produce low sodium and sodium free food.
